Tex-Mex Egg Muffins

Ingredients
4 Wolferman’s NEW Jalapeño Cheddar Cornmeal Signature English Muffins
1 Jar Harry and David's Texas-Style Gourmet Salsa
8 Fried Eggs
1 can Black Beans Rinsed and Drained
1/2 cup Queso Fresco (Mexican Cheese) or Farmers Cheese, crumbled
1 dozen Cherry Tomatoes quartered
Fresh Baby Sage
Directions
Split, toast and butter English Muffin halves, keep warm. Fry eggs to taste and begin assembling. Place two muffin halves on warmed plate, top muffins with a fried egg and drizzle Texas-Style Salsa over egg. Complete by adding quartered cherry tomatoes, crumbled cheese and black beans. Garnish with touches of baby sage. Serve Immediately.
