Pear Jewel Salad

Ingredients

  • 2 fresh Royal Riviera® Pears, cored and sliced
  • Lemon juice
  • 6 ounces very thinly sliced prosciutto or cooked ham
  • 1 pink grapefruit, peeled and sliced
  • Lettuce
  • Mint sprigs (optional)
  • Celery Seed Dressing

Directions

Toss pears with lemon juice to prevent discoloration. Cut prosciutto into long strips about 1-1/2 inches wide; roll up. Arrange pears, grapefruit and prosciutto on lettuce-lined platter. Garnish with mint. Serve with Celery Seed Dressing.

Makes about 3 servings.

Celery Seed Dressing: Combine 1/4 cup vinegar, 3 tablespoons oil, 1/4 teaspoon each salt and sugar, 1/8 to 1/4 teaspoon celery seed and 1/8 teaspoon pepper. Makes about 1/2 cup.
