Apple, Almond & Cheese Quesadillas

with Harry and David Fruit Salsa

Ingredients

  • 2 thinly sliced Granny Smith (or your favorite tart) apples
  • 4 8-inch flour tortillas
  • ¼ cup sliced oven browned almonds
  • 3 Tbsp sliced green onions
  • 8 ounces cheddar or jack cheese, grated
  • ¼ cup olive oil
  • Harry & David® Peach, Pineapple or Mango Salsa

Directions

In a non-stick 12" skillet on medium high heat, add half the olive oil. Lay one tortilla on a work surface and sprinkle evenly with one quarter of the cheese. Evenly arrange thinly sliced apples in a circle over cheese, sprinkle with half the almonds. Sprinkle with more cheese and half the green onions. Place another tortilla on top and gently lay the quesadilla in the pan. Brown evenly on each side, remove and let rest for two minutes. Cut into wedges, serve with salsa. Repeat for second quesadilla.
