2 Wolferman’s Cranberry Citrus Signature English Muffins, split and toasted
½ cup mayonnaise
1 Tbsp. Dijon whole-grain mustard
2 Tbsp. grated, unsweetened coconut
1 Tbsp. honey
salt to taste
1 ripe mango, peeled, pitted and thinly sliced
8 oz. thinly sliced smoked chicken
¼ cup dried cranberries
thin strips orange zest, for garnish
Combine mayonnaise, mustard, coconut, honey and salt in a small mixing bowl; blend well. Arrange mango slices on muffin halves. Top each half with 2 oz. smoked chicken. Top with a dollop of the mayonnaise mixture. Garnish with cranberries and orange zest.
