6 Wolferman’s Mini English Muffins

Chocolate Sauce

½ cup heavy cream

½ cup semi-sweet chocolate chips

Mascarpone topping

1/3-cup heavy cream

1/3-cup mascarpone

1 tsp instant coffee

2 tsp sugar


Split in half, lightly toast and butter the muffins. Divide the chocolate sauce into 6 equal portions and then pour a portion over each muffin. Top the muffins with a generous dollop of Mascarpone topping. Garnish with small pieces of good quality bittersweet chocolate (use a vegetable peeler to make shavings). Alternate toppings: dust with cocoa powder, fresh berries, toasted coconut or nuts or pomegranate seeds. Sprinkle with Cognac or Brandy if desired.

Chocolate Sauce

In a small heavy saucepan heat cream until it just begins to bubble, stir occasionally. Turn off the heat and add the chocolate and let it sit for about 10 seconds, then whisk until the cream and chocolate thickens and is blended well.

Mascarpone Topping

Vigorously whisk ingredients together in a medium bowl until thickened and fluffy.
