Grilled Veggie Sandwich

4 Sweet Harvest Wheat Muffins

1 jar pesto

Assorted vegetables (cherry tomatoes, asparagus, sweet peppers, zucchini or crookneck squash)

Shredded mozzarella and/or feta cheese


Split muffins in half lengthwise and toast. Spread pesto on muffins. Slice vegetables in half, coat with olive oil and grill over medium heat. Cut vegetables into bite sized pieces and pile onto muffin. Top with cheese, place on grill and heat until cheese melts.
